Mini Spanakopita Cups are buttery, flavorful, and fun little appetizers that I absolutely love to make. They are so delicious I could eat the entire batch in one sitting every time I make them.
I use a mini muffin tin to make these truly bite size, but for a bigger portion, a regular muffin tin would work just as well!
